Easter Sugar Cookies

 Happy Easter friends! I don't know about you, but I am so excited to celebrate the ressurection of Jesus Christ this Sunday! In honor of that, I wanted to share on of my favorite original cookie recpies with you! They are cream cheese sugar cookies with Cadbury mini eggs!
You are going to love these cookies, they are soft and chewy with a hint of tang from the cream cheese, and studded with pastel chocolate Easter eggs! I've had people tell me that these are the best cookies they have ever had, so preheat your oven to 370 and let's get baking!

There are a few key ingredients you will need to make these sugar cookies.
  • flour - for this recipe you want all-purpose flour. You may be able so sub other types of flour, including gluten free, but I haven't tested it. You will want to make sure you spoon your flour into the measuring cups and then level them flat. Be sure you use a dry measuring cup (labeled for each individual cup) as opposed to a liquid measuring cup (with lines marking measurements.)
  • baking soda - this is a crucial ingredient for helping your cookies brown and spread.
  • baking powder - helps make the cookies puffy. 
  • cream cheese - adding only a few ounces of cream cheese adds flavor and helps the cookies become softer and chewier
  • cornstarch - when I was developing my sugar cookie recipe, I wanted to find a way to make the cookie softer and chewier. I found many people saying that cornstarch does the trick - they were right!
  • butter - let your butter sit out before baking or soften slowly in the microwave, we don't want cold butter or melted butter here. I use salted butter because I often have it on hand.
  • sugar - you can't have a sugar cookie without sugar. For this recipe I use plain white sugar.
  • egg - eggs serve a very important purpose in these cookies. They provide moisture and fat. The first time I made drop sugar cookies with my cousin and sister, we forgot the egg and it was a crumbly mess, thankfully we caught our mistake before we baked them.
  • vanilla extract - this ingredient is vital for flavor. To make this recipe the proper way, you have to follow my Mema's advice for vanilla - add a  little extra ;)
  • chocolate - this recipe uses two kinds of chocolate, crushed and whole Cadbury Mini Eggs, and milk chocolate chips.

Easter Sugar Cookies:

Ingredients
  • 2 ¾ cups plus 2 tablespoons all purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 2 teaspoons cornstarch
  • 1 cup (2 sticks) salted butter, softened
  • 2 ounces cream cheese, softened
  • 1 ½ cups white sugar
  • 1 egg at room temperature
  • 1 tablespoon imitation vanilla extract
  • 1 ½ cups Cadbury Mini Eggs, crushed and whole
  • ½ cup milk chocolate chips
Instructions
  1. Preheat the oven to 370 degrees.
  2. In a medium bowl mix together the flour, baking powder, baking soda, and cornstarch
  3. Cream the butter until smooth in a stand mixer, then add in the cream cheese, mix until combined and fluffy.
  4. Add the sugar to the butter mixture and mix well.
  5. Add in the vanilla extract and the egg, mix until fully incorporated.
  6. Add the flour mixture in small increments until all is incorporated.
  7. Finally, add in the mini eggs and milk chocolate chips.
  8. Scoop out onto a parchment lined cookie sheet and bake for 12-14 minutes, or until golden brown. if they don't look completely set in the center, don't worry, they will continue baking as they rest on the baking sheet. Let the cookies cool. Then move to a rack.
